Sweet Potato Chili

Sweet Potato Chili

Ingredients:
 
2 lbs grass-fed beef
1 large yellow onion – diced
4 cups navy beans*
3 1/2 cups tomato sauce or puree
2 cups chicken broth
3 cloves of garlic – minced 
2 tsp of salt (adjust to taste)
1/2 cup fresh chopped cilantro
3 cups sweet potatoes – finely diced 
This makes 16 cups, so cut recipe in half for a smaller batch.
 

Instructions:

Brown beef in a large stock pot.  Add all of the remaining ingredients except for the cilantro.  Cook on a low simmer for around 20 minutes until the sweet potatoes are tender.  Add the chopped cilantro and simmer another 5 minutes.  Serve with your favorite toppings!

*Notes:

Canned navy beans can be used or sprouted navy beans. Just make sure to cook the sprouted beans first. Using sprouted beans help reduce the anti-nutrients like phytic acid and lectins that legumes naturally carry. Here’s a great article explaining why it’s important to sprout beans first.
