Honey Sage Chicken Sausage

Ingredients:
1 lb ground chicken (or ground pork)
1 tbs fresh sage – very finely chopped (or up to 2 tbs if you love the SAGE taste)
1 tsp celtic sea salt
1/2 tsp white pepper
1/2 tsp allspice
1/2 tsp crushed red pepper (optional for additional heat)
2 tbs honey
1 tsp olive or avocado oil
1 tsp minced garlic
1/2 cup yellow onion – very finely diced
Note: Fresh sage is a must in this recipe! I tried making this with dried sage and it did not do it justice.
In a bowl, add chicken, sage, salt, pepper, allspice and honey. Mix until well incorporated. While that mix is sitting, turn skillet on to medium and heat oil. Add garlic and onion and sauté until onions are translucent. Let cool for a few minutes and then add to the chicken mix. Fold into the chicken mixture until well incorporated and then make patties. Heat patties on griddle until cooked all the way through flipping half way through. You can add a little cooking oil to pan to keep them from sticking if needed.
