Coconut Lemon Pecan Balls

1/4 cup coconut oil – melted
3 cups pitted dates
1/2 cup fresh lemon juice
1/4 cup chia seeds (optional)
2 cups pecans
2 tsp lemon zest
1/2-1 cup coconut flakes for rolling

If your food processor won’t hold all these ingredients at one time then work in batches: Pulse dates and coconut oil until dates are finely chopped. Transfer to a bowl. Next pulse pecans until finely chopped. Transfer to the bowl with the dates. Add lemon juice, zest and chia seeds mixing everything well with your hands until well incorporated. Roll in between hands to form balls and then roll in coconut flakes. Store in frig.
