I made this simple ice-cream while at the beach. After passing a bazillion ice-cream shops, non of which had any good dairy free options, I knew I had to make something for the kids to enjoy. We had picked up some nice ripe local peaches and they were just perfect for a homemade batch of ice-cream. I prefer my ice-cream more soft serve which is what is pictured below. However, you can freeze longer to make nice round scoops of ice-cream or pour into popsicle molds. The kids went crazy over this simple but delicious dessert!
Peaches and Cream “Ice-cream”

Ingredients:
2 cans coconut cream (13.5 oz) – using cream only roughly 1 cup per can (2 cups total)
1-2 tbs honey
1 tsp cinnamon
1/2 tsp celtic sea salt
1/4 cup coconut shreds
1/4 cup toasted pecans or walnuts (toast before adding) – OPTIONAL
4 extra ripe peaches – peeled and cut off of seed
Add all ingredients in a blender, food processor or Vitamix. Gently pulse or blend for a few seconds until all is incorporated. Do not over mix, but the peaches and nuts should be finely ground.
Option 1 -Pour into popsicle molds and freeze.
Option 2 – Pour into a glass bowl. Freeze for 2 hours or so until ice-cream has become soft serve consistency or freeze longer for a harder scoop of ice-cream. Scoop out with a ice-cream handle.
