Creamy Dreamy Cashew Butter

2 cups raw cashews
8 pitted dates
1 tsp sea salt
1/2 tsp cinnamon
1 tbs avocado oil (+ more for variation in butter)*
Soak cashews in filtered water for 4 hours. Drain and rinse. In a Vitamix or Food Processor add all ingredients blending at high speed. You may have to scrap down sides of butter a few times or if using a Vitamix use the tamper to keep pushing butter down to mix through.
It is possible that you may need more then 1 tbs of avocado oil to get the butter nice and smooth. You can either add on demand by slowly drizzling through the top as you blend or you can add 1 tsp at a time.
For a sweeter cashew butter add a few more dates.
Store in a glass jar in refrigerator.
