Sweet Potato Pancakes
1/8 cup almond flour
1/2 cup cooked sweet potato
1/2 tbs honey
1/2 tsp cinnamon
1/2 tsp vanilla
pinch of sea salt
*Can also add a dash of nutmeg, cloves, and ginger
**Can sub 2-3 tsps of coconut flour for almond flour. They will be a little thinner and more crepe like but still good nonetheless!
***Depending on how sweet you want these pancakes you might can omit the honey or reduce. Sweet Potatoes are so naturally sweet, most of the time you need any additional sugar.
In a bowl, whisk all ingredients until a smooth batter is achieved. Cook on griddle on low heat.
Top with honey butter (made out of clarified butter), toasted pecans, and pure maple syrup.
