To marinate steak:
1.5 lbs bottom round steak thin sliced
1 tbs chili powder
1/2 tbs cumin
1/2 tb
s chipotle powder
1 tsp garlic
1 tsp sea salt
1 tbs oil (olive or avocado)
Cut steak into thin strips. Put in a bowl, then add remaining ingredients tossing until well coated. Let sit for 15-20 minutes.
While steak is marinating, prepare remaining ingredients in fajitas:
1 red bell pepper thinly sliced
1 green bell thinly pepper
1 onion thinly sliced
2 tbs oil (olive or avocado)
In a skillet, heat oil on medium heat and then add peppers and onions. Sauté for 10 minutes or until veggies are tender. Add salt/pepper/garlic to taste. Add the steak and cook another 5 minutes, stirring periodically. After meat is cooked (be careful not to overcook), add juice of one lime stirring until blended.
Serve fajitas over a bed of lettuce topping with fresh gaucomole and salsa.
