These little babies are so versatile with lots of options from sandwiches to using as toast. Smearing avocado, greens and top with a fried egg or use in lieu of traditional bread. I absolutely love these sweet potato buns on a hamburger. The salty and sweet combo just hits the spot every.single.time! As long as you don’t over cook the sweet potato, it usually holds up pretty darn well considering what it is.
Instructions:
Peel off the skin, although you could leave on if preferred. Cut in thick slices – anywhere from 1/4 – 1/3 inch thick. Place on a parchment lined baking sheet. Cook at 400 degrees for 20 minutes, flipping half way at the 10 minute mark. Sprinkle with sea salt. Depending on your oven calibration, you might need to play around with oven temp and time if 20 minutes doesn’t work out perfectly.
