3 ripe bananas
1/4 cup honey
1/2 cup coconut oil
1 tsp pure vanilla extract
2 cups brown rice flour (organic and/or sprouted)*
1 tsp baking powder
1/2 tsp sea salt
1/4 cup dairy free chocolate chips
1/4 cup pecans or walnuts (optional)
*You can sub out the brown rice flour for Bob’s Red Mill Gluten Free 1:1 Baking Mix.
In a bowl, mash bananas until liquidy. Add the wet ingredients and stir, then add flour, baking powder, and salt. Stir until mixture comes together. Add chocolate chips and nuts if you prefer.
Yields 12 muffins or 36 mini muffins.
Bake 350 muffins 18 minutes and minis 12 minutes.
